Roasted Veggie and Quinoa Bowl

This filling bowl is easy to make ahead of time for lunch, or you can make it right when you need it. Start with 2 cups of your choice of quinoa and steam it for roughly 30 minutes. While it steams, chop up some bell peppers in the colors of your choice and 1 cup of Swiss brown mushrooms. Put these vegetables in a bowl and add one can of drained chickpeas. Toss with your desired amount of paprika, cumin, coriander, salt, and pepper. Spread the medley on an oiled baking dish and cook using both convection and steam heat for 10–15 minutes. Mix the florets in a bowl with one clove of minced garlic and 1/4 cup of olive oil, along with coriander, cumin, salt, and pepper to taste. Roast the spiced cauliflower on combination steam for roughly 20 minutes or until golden brown. While it cooks, you can toast pumpkin, sunflower, and sesame seeds, or leave them raw. Remove the cauliflower, top with the seeds, and garnish with pitted dates and pomegranate seeds. Finally, add your dressing of choice!
