Disney’s Ratatouille showed just how elevated this dish can be, but it’s also a quick bake if you don’t have time for fancy eating. Slice up an eggplant, white or yellow onion, zucchini, and three Roma tomatoes. Combine everything in a bowl with 2 tablespoons of olive oil, a clove of fresh garlic, and roughly 1 tablespoon of Italian herbs. Add salt and pepper to taste. Steam bake for 20–25 minutes or until the vegetables are soft. You can eat it on its own or serve it over potatoes or pasta.
Roasted Veggie and Quinoa Bowl
This filling bowl is easy to make ahead of time for lunch, or you can make it right when you need it. Start with 2 cups of your choice of quinoa and steam it for roughly 30 minutes. While it steams, chop up some bell peppers in the colors of your choice and 1 cup of Swiss brown mushrooms. Put these vegetables in a bowl and add one can of drained chickpeas. Toss with your desired amount of paprika, cumin, coriander, salt, and pepper. Spread the medley on an oiled baking dish and cook using both convection and steam heat for 10–15 minutes. When it’s done, mix the veggies with the quinoa and add a dressing of your choice. You can also defrost and reheat in a steam oven, so if you want to reheat the quinoa before eating, you can.
Spiced Cauliflower and Seed Salad
Salads are popular meal choices in the vegan community, but that doesn’t mean you have to only eat the leafy green kind. Break one head of cauliflower into florets to start this delicious salad. Mix the florets in a bowl with one clove of minced garlic and 1/4 cup of olive oil, along with coriander, cumin, salt, and pepper to taste. Roast the spiced cauliflower on combination steam for roughly 20 minutes or until golden brown. While it cooks, you can toast pumpkin, sunflower, and sesame seeds, or leave them raw. Remove the cauliflower, top with the seeds, and garnish with pitted dates and pomegranate seeds. Finally, add your dressing of choice!
These three quick vegan meals are perfect for anyone on the go. You can make them in your steam oven and easily have lunch while working from home or dinner on a busy night. Let SoFlo Vegans know which recipe you try and what you think of these easy meals!
